Glorious Guacamole
I didn't like guacamole until I met my husband. He makes amazing guacamole. My dad really got him started making large quantities of guac one summer. When we would come over, he would have Jason grill steaks and make a giant bowl of guacamole. He would buy the materials, and Jason was happy to comply.

Jason has continued the family style guacamole making with our youngest who has a special love for avocados. Once he made it while she was playing with a friend, and after she tasted it, she commented, "It's good, but not great because you made it without me!"
So here's the method to their madness:
Gather these ingredients:
- 6 large avocados
- lemons and limes
- tomatoes
- green onions
- yellow onion
- salt
I love anything with lime juice in it! Yum!
While daddy cuts the avocado, removes the pit, and scoops out the fruit, his little helper prepares the lemons for squeezing. Gently tap the pit with your knife and twist, then it comes right out!

Then daddy mashes the avocado and adds the salt...carefully - he's overdone it a time or two (once we even went to buy more avocados to tone down the saltiness). Also keep in mind that if you are serving the guacamole with super salty chips, you might want to go easy on the salt.
Now we're ready for more mashing. By adding the lemon and lime juice, the avocado becomes creamy and easy to blend.
The chefs must taste their masterpiece again to ensure the right quantities. My favorite part is watching their faces as they decide if it needs a touch more lime, or a dash of salt. It is truly an art.
Now for more ingredients. Little girl takes on the green onion while daddy chops the tomatoes and yellow onion. This is truly a team effort.
When all of the ingredients are ready, add to the blended avocado and mix well.
Make sure to have chips ready, because tasters will come from far and wide to ensure quality control!
Looks like they were successful this time, as the tasters smile with delight. This time we're serving it at the park with hot dogs (super way to add yumminess to a hot dog) and chips, so I'll pack it in a dish to go. It never lasts long whatever way we serve it!
