  • 1/2 English muffin
  • ¼ cup cottage cheese
  • 1 tsp Italian seasoning
  • 1 small tomato sliced
  • 1 drizzle extra virgin olive oil
  • 1 drizzle balsamic vinegar


  • Toast one half on an English muffin.
  • Slice your tomato.
  • Top the toasted muffin with ¼ cup cottage cheese. Sprinkle seasoning on cottage cheese. Top with tomato slices and then drizzle with olive oil, balsamic vinegar, and green onions.
