When I first got my Instant Pot, I was only brave enough to use the slow cooker function. That was safe! My first experience actually pressure cooking something was boiling eggs. Since it was such a success, I decided I'd get brave and try a whole chicken.
I found this simple recipe for cooking a whole chicken in my pressure cooker, and I couldn't wait to try it. I cooked a whole chicken in a flash and ended up with this amazing broth/gelatin left-over that I couldn't wait to make into soup.
One of the cool features of my Instant Pot is that there are pre-programmed settings that make it simple and fool proof to operate. I wondered if there would honestly be any difference between heating up my soup on the stove top and cooking the soup with the "soup" setting on the pressure cooker.
Let me tell you - there was a difference. And it was amazing!
Veggie Chicken & Rice Soup
The soup tasted like it had been slow cooked all day long. It was so creamy and thick and wonderful.
It really can't get any simpler than this. I love to know that I'm preparing healthy and comforting foods for my family, and the cleanup is super simple too. All you do is put the ingredients in the pressure cooker, lock the lid on, press the "soup" button, and let the Instant Pot work it's magic.
This is such a flexible recipe. If you've got the gelatin and chicken, you can add any veggie combo you like.
