There is nothing worse in a Texas summer than slaving over a hot stove, or heating up the house with the oven. I know you still need to eat well in the summer, but I don’t want to sweat while I’m cooking! Summer salads are a great solution to beating the heat in the kitchen. With just a few ingredients, you can feed your family well and stay cool at the same time.
I’ve really loved having an instant pot even in the summer. It prepares chicken in a flash, and you don’t feel the heat. I added a packet of Ranch dressing mix to a pound of thawed chicken and had everyone drooling within minutes! It added a fun twist to a classic protein. Just add the chicken to the cooker, pour contents of the packet on top, and press the “poultry” button. It’s so easy.
If you’re cooking with a crock pot, you just have to remember a bit earlier! Put your frozen chicken in with the seasoning mix and cook for four hours on high.
When you pair ranch chicken with avocado, bacon, tomato, and walnuts, you have a crowd pleasing healthy meal. The best part is that it only takes minutes to throw together.
If you’re not cooking for a crowd, go ahead and cook a pound of meat. It will make excellent left overs for another meal later in the week.
On hot summer days, it’s really hard to want to eat well, much less cook. When you’ve spent the day in the pool, the last thing I want to do is come home and cook. Thankfully, I don’t have to do much with a meal like this.
The second worst thing during the hot summer months is grocery shopping. I seem to never have the time. My life saver this summer is Walmart’s online grocery ordering system. I shop (generally in my pjs between 10pm & midnight), schedule a time to pick it up, and swing by at my convenience the next day. I don’t even have to get out of my car. They bring my groceries to me, and I sit while they load them up! No tips allowed!!
The first time my husband came with me to pick up a grocery order, he was shocked at how simple it was. He knows my secret now. I can’t complain about grocery shopping!
