Sometimes veggies need to be the center of attention in a meal. Too often, they’re left out, and they shouldn’t be! If you’ve got a family that struggles with enjoying eating their vegetables, roasted veggies are a great way to introduce new foods to your family. Add bacon, and no one will be able to resist!

Now I don’t have a ton of time to make luxury meals all of the time. If I’m going to give attention to the veggies, the chicken is going to have to take the back seat, and that’s why I love rotisserie chickens. They are a wonderful and cost effective way to add some protein to your plate.
Roasted Veggies are the Star of the Show
I took my daughter to the store to help pick the veggies for the night. She started off with our family’s favorites: red and orange bell peppers. Next we perused the veggie section to see what we wanted to add to the mix. She went for color – orange cauliflower! Then she picked baby broccoli…it looked cute.
Taking kids to the store to help you pick out new veggies to try gives them the leg up when it comes to enjoying it later when you eat it.
When we got home, we chopped up the veggies and covered them in Newman’s Own Balsamic Vinaigrette. I love this stuff. It takes the guesswork out of seasoning your vegetables. My daughter was drooling as she poured it over the beautiful and colorful chopped veg. It smells amazing, and we could have skipped the roasting and went straight to eating.
A quick stir to make sure everything was coated is all you need before you spread it out on a baking tray.
Bacon as a Secret Weapon
Bacon makes everything AMAZING, but I struggle with the mess of cooking big strips of bacon. I’m a simple cook, and I like things quick and easy to make, as well as quick and easy to clean. My husband could live off of these bacon crumbles. Add a quick sprinkle to your veggies, and let the magic begin.
When the oven is nice and hot, put your pan in the oven and wait for the oohs and aahs to come from your family as they smell the amazing aroma of roasted vegetables.
Serve with rotisserie chicken and rice, and your family will gobble it up!
